When we took over Pizza 2 Go, one of the first things we wanted to improve was the dough. We spent countless hours testing temperatures, fermentation times, and storage methods until we found a process that gave us the crispy crust and soft interior we were looking for.

Most people think the toppings make a pizza, but we think the dough is actually the foundation. Dough affects the crust, texture, chew, crispness, and even how well the toppings hold together.

Why Great Pizza Starts with Great Dough

A great pizza doesn't begin when it goes into the oven, it begins long before that with time, patience, and fermentation. Fresh dough is alive! As it rests, the yeast slowly feeds on the natural sugars in the flour, producing carbon dioxide along with hundreds of flavour compounds that simply aren't present in dough that's rushed. The longer the dough is given to develop properly, the deeper and more complex its flavour becomes. That's why well-fermented dough has a subtle richness and slight sweetness that you just can't fake.

Fermentation also transforms the texture of the dough. As time passes, the gluten structure relaxes and strengthens at the same time, allowing the dough to stretch more easily while trapping tiny air pockets. Those air pockets are what create a light, airy interior with a satisfying chew instead of a dense, heavy crust. Patience really is one of the most important ingredients in great pizza, and it's something that can't be replaced by shortcuts.

Our Dough Is Stored Differently

One thing we're especially proud of is the way we store and prepare our dough. We spent a long time experimenting with different methods because we wanted to create a crust that bakes up naturally crispy without relying on large amounts of oil.

Instead of using heavy oil to force a crispy texture, we've developed our own storage and preparation process that encourages the dough to bake with a beautifully crisp exterior while keeping the inside soft, light, and airy. It allows the dough to develop the texture we're looking for naturally, letting the quality of the dough do the work rather than masking it with extra oil.

We've searched for other pizza shops using a similar approach, and so far we haven't found anyone storing and preparing their dough quite the way we do at Pizza 2 Go in invermere. That doesn't necessarily make it the only good method, but it is one we've refined through a lot of trial, error, and countless batches of pizza. It's one of the little details that makes our dough unique, and we believe it's a big part of what makes every pizza from Pizza 2 Go stand out.

With Great Dough, Comes Great Responsibility

One of the biggest misconceptions about pizza dough is that it's simply mixed together and used the same day. In reality, great dough requires planning days in advance. Every batch we make is part of a schedule that starts well before your order is placed. From mixing to fermenting to preparing it for service, every step has to happen at the right time to produce the flavour and texture we're looking for here at Pizza 2 Go.

Temperature plays a huge role throughout the entire process. Even small changes can affect how quickly the yeast works and how the dough develops. That's why we're constantly paying attention to how our dough is behaving, adjusting our schedule when needed, and making sure every batch has the time it needs to ferment properly. Dough isn't something you can rush—timing is just as important as the ingredients themselves.

Our dough at Pizza 2 Go is usually at its absolute best after it has had about a day to fully develop. From there, it continues to make excellent pizza for a limited time before the quality begins to change. Because dough is a living product, every batch naturally evolves as it ages. Managing those changes while delivering the same great pizza every day is one of the biggest challenges in making fresh dough from scratch.

Before any dough reaches your pizza, every dough ball is inspected by hand. If it doesn't meet our standards, it doesn't get used. We believe consistency isn't something that happens by accident, it's the result of careful planning, constant monitoring, and paying attention to the small details every single day.

Making dough this way takes significantly more work than many people realize, but we believe the extra effort is worth it. It's one of the reasons we're proud of every pizza that leaves our kitchen and why we continue to invest so much time into perfecting our process.

Why We Don't Cut Corners

Good dough can't be rushed, so we don't try. We let fermentation take the time it needs, because shortcuts here always show up later — in the crumb, in the flavor, in the way the crust holds up.

We're careful with oil too, adding just enough to support the texture without weighing the dough down or masking the flavor of a proper ferment. And because flour, humidity, and temperature shift with the seasons, our process shifts with them — the recipe on a humid August afternoon isn't the same as the one we use in dry January. None of that variation is visible to you. What you get, every single day, is our effort of trying to create the same dough: consistent, dependable, and made the right way instead of the fast way.

The Result

All that patience shows up the moment you take a bite. The outside shatters slightly with a satisfying crispness, while the inside stays soft, airy, and tender. The crust is sturdy enough to hold your toppings without buckling or getting overwhelmed, yet it never turns soggy underneath — even with a saucier topping combination. And because the dough is built right from the start, it doesn't just shine fresh out of the oven. Reheat a slice the next day and it bounces back beautifully, crisping up again instead of turning tough or stale. That's the difference real fermentation makes!

The Final Slice

At Pizza 2 Go, great pizza starts with great dough — and great dough starts with patience. We ferment every batch slowly instead of rushing it, use minimal oil so the crust crisps up naturally, adjust our process with the seasons, and hand-inspect every dough ball before it touches a topping. The result is a crust that's crispy outside, soft inside, strong enough to hold your toppings without going soggy, and just as delicious reheated as it is fresh out of the oven. It's a simple philosophy, really: no shortcuts, no rushing, no cutting corners — just consistent, carefully made dough, every single day. That's the Pizza 2 Go difference.
